The noodle guide: the range across your menu

A3 Noodles offers 18 noodle, wrapper and fish products spanning the Cantonese, Malaysian, Vietnamese, Thai and Japanese menu — hor fun, chow mein, hokkien, pan mee, udon, egg noodles, wrappers and fish balls. The noodles and wrappers are freshly made on large-scale production lines at A3's Tullamarine facility in Melbourne, always to the same specification, so kitchens can plan their menus around a steady, local supply.

Cantonese menus

From the ho fun on the wok line to the egg noodle in the wonton bowl — soup and stir-fry rice noodles, both chow meins, silver-thread egg noodle, wonton wrappers and rice rolls can all arrive in a single delivery from us. Our part is to keep the quality steady: every batch freshly made to the same specification, so the kitchen can cook with confidence and focus on its own craft.

The rice roll is also supplied ready-made, in the hope of taking one preparation step off the kitchen's hands.

Malaysian menus

Hokkien noodle, pan mee and stir-fry rice noodle are freshly made to one standard, and the fish balls and fish cake for laksa and curry mee can arrive in the same delivery. These dishes carry the reputation of a Malaysian kitchen; we understand the weight of that, and hope to be the steady supply behind it.

Vietnamese menus

Soup service asks for a noodle that stays whole in a hot bowl. Our soup rice noodle is freshly made with exactly that in mind, and we are glad to include fish balls for the soup menu in the same delivery.

Thai menus

A dedicated pad thai cut and a wider stir-fry rice noodle are both available. They come off the same production line, and we work to keep their texture consistent from delivery to delivery, so the kitchen's calibration holds.

Japanese menus

Thick udon suits soup, curry and teppan dishes, and our dumpling wrappers are made to hold up through busy gyoza service — prepared with the same fresh-made care, and delivered alongside the rest of the order.
