A3's Canton Chow Mein (廣東炒麵) is a fine noodle made for pan-frying into a crisp golden nest — classic crispy chow mein. Singapore Chow Mein (豉油王炒麵) is made for the soy-sauce-king style: tossed hot with dark and light soy for a glossy, smoky fried noodle. Both come in 500g and 2kg packs.
